Our "sfoglia" is a handmade thin dough prepared by combining fresh eggs and flour. The final product consists of flat and thin layers, finely worked with a rolling pin ("mattarello") by our "sfoglina" lady Palma.
According to ancient and authentic emilian tradition, lady Palma rolls a thin "sfoglia", just as our grandmothers used to do... The result is a perfect match! Ragu sauce and tagliatelle or mortadella and parmigiano in tortellini or fresh ricotta cheese in tortelloni!
